Only beech and alder trees are used for smoking. Which results in a beautiful color of the finished product. Taste, however, is a recipe for years of experience and a heart that needs to be put into the entire production process to get a unique cheese.

Highlander's Oscypki from sheep's cheese
Oscypek is a traditional cheese, sheep's cow tastes best between May and October, when the sheep are already grazing in the halls, they eat fresh grass, no chemicals, no preservatives. This unique taste of oscypek can only be obtained thanks to tradition and unchanging recipe. Knobs are smaller forms of oscypek with a shape reminiscent of barrels and their types basically depend on the imagination of the producers. Knobs can be traditional, i.e. made according to a recipe like oscypek, i.e. from sheep's milk in a proportion of 70% sheep's milk and 30% cow's milk. They can also be made from cow's milk or 100% sheep's milk. As for taste, the types of knobs delight with their variety because they are more salty, mild butter knobs. There are also barrels with toppings, e.g. with black cumin, cranberry garlic, etc. The knobs and cheeses we offer are ideal for barbecues. And if we combine them with cranberries or bacon or honey, we get an explosion of taste that will surely delight us.

Bunc in different flavors
In our repertoire of flavors, it's also worth appreciating bunc. It is a cheese taste and texture similar to mozzarella. However, its taste is much better than traditional Italian cheese. Bunc is the first form cheese must take to become oscypek. However, it often stays in this form because there are a lot of Bunca enthusiasts all over Poland. In our offer you will find other types of this noble cheese, namely bear's garlic bun, a salted ball of cheese coated with finely chopped garlic. Smoked bunc is hard cheese and salty on the inside, velvety and delicate combination of these two opposites gives pleasure to the palate. You should not forget about the chilli bun that will satisfy all lovers of spicy flavors.
