This cake is the ideal dessert for hot days: it has lemon, mint and a touch of rum. We tell you how to do it step by step!
Mojito cake
INGREDIENTS
For the sponge cake
180g flour
115g of muscovado sugar
11g baking powder
125 melted butter
3 eggs
1 green lemon
A bunch of mint
3 teaspoons of rum
For the frosting
300g cream cheese
50g icing sugar
Zest of a lemon
1 teaspoon of rum
Mint leaves
PREPARATION OF THE CAKE
In a large bowl beat the eggs on high speed with the sugar and then add the melted butter. Take care that it is at room temperature, so that it does not make the eggs fall.
Sponge cake preparation
Separately, sift the flour with the baking powder and add them little by little to the mixture. Incorporate until you have a homogeneous mass.
Finally, add chopped mint leaves to taste and teaspoons of rum.
Pour into a cake pan and bake for 30 min. at 180º.
PREPARATION OF THE GLASS
In another bowl, beat the cheese with the icing sugar and rum. Store the mixture in the refrigerator while the cake is baking.
Glaze preparation
BON APPETITE!
Take the cake out of the oven and let it cool. When it's at room temperature, top it with the frosting and sprinkle with chopped mint leaves and lemon zest.
Bon Appetite!
To enjoy!
